Dale Smith, chef at The Dabbling Duck Pub tells us about his culinary journey
When did you first get interested in cooking?
I have always been interested in cooking, since I was a teenager, it grew into a passion, and it very quickly became what I wanted to do. As a family we aren’t sure where the passion came from, I do love to be creative and through food I feel I can do this.
What is your signature dish?
I don’t really have a signature dish, and I don’t like to do the same dish twice; there might be similarities in dishes, but I am always trying to make them better. I am still experimenting and perhaps as I grow older I will. I will let you know!
If there was anyone in the world you could cook for, who would it be?
Nobody springs to mind, there are so many chefs I admire and pull ideas from, I enjoy cooking for my family and friends they can be the hardest critic’s
What do you eat at home?
Most of the time barbecue, you can’t beat smoked, and wood fired food, it makes it a lot more interesting to cook. I make my own barbecues at home as I like to experiment. The kids also love a barbecue!
