Gordon Ramsay’s former number two, Stuart Gillies was CEO of the Gordon Ramsay Group for seven years. Before that, earned international acclaim as chef at Michelin-starred restaurants around the world and is a regular on TV shows including Saturday Kitchen, Hell’s Kitchen and Great British Menu.
Number Eight launched in 2022, and the restaurant benefits from Stuart and Cecilia Gillies 40 years' experience at the top of the hospitality world and relationships with the best, luxury artisan suppliers for their own more personal, family-run dining experience.
Cecilia brings extensive front-of-house experience to the restaurant. She trained at the prestigious Le Boeuf sur le Toit in Paris, before heading to London to open Marco Pierre White’s Criterion and relaunch Soho’s iconic Quo Vadis with the legendary chef.
The cosy restaurant and bar in the historic market town’s beautiful, 16th century building offers seasonal à la carte menus, weekly changing set menus of classics, weekend Sunday roast and brunch menus, as well as children's menus.
Like the dishes, the interior is focussed on comfort and elegance, with floor to ceiling windows, smoked oak parquet floors, warm tan leather and velvet blue banquettes, a grand, marble-topped bar and gold rimmed lighting. There is also an outdoor terrace for sunny, al fresco dining and a semi-private dining area for up to 14 guests in The Gallery, which doubles as an intimate space to showcase work by up and coming artists.
The menu reflects Stuart’s years, cooking and tasting his way around the world from Stockholm and Rome to New York and London. Dishes include Crab Fettuccine, prawn sauce, onions and chilli; Grilled Chart Farm Venison Pavé, blackberry jus, rosemary potatoes and buttered savoy; and pan-seared pink bream with curried leek and mussel tart. The eclectic wine selection is sourced from natural and biodynamic wine experts, Les Caves de Pyrene as well as George Barbier, the fine wine supplier for most Michelin establishments; exclusive organic supplier Wanderlust Wine and a host of local English Vineyards, including Kingscote, Gusbourne and Chapel Down.
