Revealing a love of cooking that started in childhood, Luca Tammaro, head chef at Posillipo reveals his favourite flavours

Tell us a bit about yourself...

I am Luca Tammaro, and my journey at Posillipo began at the young age of 13. Over the years, my time here sparked a deep passion for culinary arts, igniting my dream of one day becoming a chef. Since then, I have progressed through the ranks, to head chef.

Beyond the confines of the kitchen, I am graced with a partner and a son, who both hold a special place in my heart. I enjoy taking strolls along the coastline with them and in my spare time I go to the gym.

When did you first get interested in cooking?

During my childhood I frequently helped my dad in the kitchen as he prepared meals at home. The moments we shared while cooking sparked my ambition to pursue a career as a chef.

What is your signature dish?

Beef carpaccio.

If you could cook for anyone in the world, who would it be?

I don't really have anyone in mind. I believe in sharing meals equally with everyone I meet, so each dish I create is meant for all, but I do love cooking for my family.

What do you eat at home?

I primarily follow a Mediterranean diet. I am quite particular about combining carbohydrates, meat, fish, and plenty of vegetables in my dishes. I also exercise often to stay healthy.

Which kitchen ingredient could you not do without?

Olive oil stands out as a staple that I simply cannot do without. In addition to that, garlic and fresh herbs are equally indispensable in my kitchen.

If you could dine at any restaurant where would it be?

I look forward to visiting Villa Crespi in Italy, renowned for its three Michelin stars.

What would you eat for your last meal?

A classic Italian Sunday lunch like my mum used to make - starting with a big plate of baked pasta in a rich ragu sauce. Then, I’d enjoy some tender slow-cooked Italian-style beef, savouring each bite as a loving memory of those cherished Sunday family meals.

Favourite music to cook by?

I like a mixture of music genres, I can’t pick a favourite.

What do you do to relax?

Spend time with my son.

Chef Antonino Cannavaciolo.
