This Mother’s Day, I have been thinking about ways I can celebrate the occasion with my favourite ingredient - cheese.
From cheesy waffles, baked cheese breads or scrambled eggs with your favourite cheese, cheese is the perfect way to celebrate this Mother’s Day.
I hope you enjoy my croissant bake, which can be made in advance, and then bake just before you are ready to serve. Full of cheesy goodness this crowd pleaser is so tasty and easy to make.
Mother's Day ham, cheese and mushroom croissant bake
Serves four people.
Ingredients
3 large eggs
Pinch of sea salt and pepper
4 croissants
200g truckle of Cheshire Cheese Company Black Bob Cheddar Cheese or Vintage Cheese
1 punnet of fresh mushrooms
2 cloves of garlic
2 tablespoons of fresh thyme
600ml double cream
2 tablespoons of Dijon mustard
150g Prosciutto
2 teaspoons Everything Bagel seasoning
2 tablespoons of olive oil
Method
Pre-heat the oven to 170 degrees C / 350 degrees F
Tear the croissants into quarters and arrange in an oven proof dish
Add the butter and transfer to the oven for 10 minutes until crip and golden
Add the olive oil to a frying pan and add the mushrooms, season well and using a garlic mincer, add the garlic and thyme
Remove from the heat and set aside
In a large jug, mix the cream, eggs, mustard and a pinch of salt and pepper. Pour over the croissants and add the mushrooms and prosciutto
Add grated Vintage Gold Cheddar or Black Bob Cheddar to the dish and sprinkle with a little of the Everything Bagel mix.
Cover the dish with tinfoil and bake for 30 minutes.
Remove the foil and bake for a further ten minutes until croissants are golden on top.
